Ingredients
- 1/2 cup Oikos Pro plain Greek yogurt
- 1/2 cup fat free cottage cheese
- 1 1/2 cups stevia
- 1/4 cup avocado oil
- 1 tablespoon baking powder
- 1 egg
- 2 egg whites
- 2 teaspoons vanilla
- 2 cups flour
- Zest of 1 orange
- Zest of 1 lemon
Step 1: Preheat the Oven
Begin by preheating your oven to 400°F (200°C).
This will ensure that your muffins bake evenly and rise properly.
Step 2: Blend the Base Ingredients
In a blender, combine ½ cup of Oikos Pro plain Greek yogurt and ½ cup of fat-free cottage cheese.
Blend these ingredients together until the mixture is smooth and creamy.
Step 3: Add Remaining Ingredients
To the blended mixture, add 1½ cups of stevia, ¼ cup of avocado oil, 1 tablespoon of baking powder, 1 egg, 2 egg whites, 2 teaspoons of vanilla extract, and 2 cups of flour.
Zest one orange and one lemon, and add the zest to the mixture.
Mix all the ingredients until they are well combined and form a thick batter.
Step 4: Prepare the Muffin Tins
Pour the batter into muffin tins, filling each cup about 2/3 full to allow room for rising.
Make sure to use non-stick spray or liners to prevent sticking.
Step 5: Bake the Muffins
Place the muffin tins in the preheated oven and bake at 400°F (200°C) for 6 minutes.
After this initial baking time, reduce the oven temperature to 350°F (175°C) and continue baking for an additional 20 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool and Serve
Once baked, remove the muffins from the oven and allow them to cool in the tins for a few minutes.
Then transfer them to a wire rack to cool completely before serving.
