Preparation Time | 10-15 minutes |
Cooking Time | 25-30 minutes |
Total Time | 35-45 minutes |
Level of Difficulty | Medium |
Ingredients
- 1 large whole egg
- 1/2 cup cottage cheese
- 1/2 teaspoon vanilla extract
- 1 tablespoon sweetener
- 1 scoop protein powder
- 1 tablespoon greek yogurt
- Graham cracker crumbs (for crust)
- Butter (for crust)
Step 1: Gather Ingredients
Start by gathering all the necessary ingredients: 1 large whole egg, 1/2 cup of cottage cheese, 1/2 teaspoon of vanilla extract, 1 tablespoon of your favorite sweetener, 1 scoop of your favorite flavor protein powder, and 1 tablespoon of a complementing flavor Greek yogurt.
If you want a crust, also prepare graham cracker crumbs and a little butter.
Step 2: Blend the Cheesecake Mixture
In a food processor, add the egg, cottage cheese, vanilla extract, sweetener, protein powder, and Greek yogurt.
Process all the ingredients together until the mixture is smooth and creamy.
If desired, you can mix in nuts, chocolate chips, or any other add-ins at this stage.
Step 3: Prepare the Crust (Optional)
If you choose to make a crust, mix together graham cracker crumbs and a little melted butter in a bowl.
Preheat the oven to 375°F (190°C) and bake the crust for 5-7 minutes, or until it looks golden and done.
This step is optional but adds a nice texture to your cheesecake.
Step 4: Bake the Cheesecake
Pour the cheesecake mixture into an oven-safe pan or dish.
Bake the cheesecake at 325°F (162°C) for around 20-25 minutes.
Keep an eye on it and adjust the baking time based on the size of your pan; the cheesecake should be set but still slightly jiggly in the center.
Step 5: Cool and Refrigerate
Once baked, remove the cheesecake from the oven and let it sit at room temperature for a bit.
After it has cooled, refrigerate the cheesecake for a few hours to allow it to set properly before serving.
Step 6: Add Toppings and Serve
For added flavor, you can top the cheesecake with sugar-free pudding, jello, pumpkin, healthier pie fillings, fresh fruit, protein frostings, nut butters, or whipped cream.
Once topped, slice and enjoy your delicious, high-protein cheesecake!
