Ingredients
- 1 cup cottage cheese (2% used)
- 2 tablespoons butter (solid and cut into small cubes)
- 1/3 cup cane or regular sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 2 tablespoons cornstarch
- 3 1/2 cups almond flour
- 1/2 cup dark chocolate chips (plus more for topping, optional)
Step 1: Preheat and Prepare Baking Sheets
Preheat your oven to 350°F (175°C) and line 2 large baking sheets with unbleached parchment paper.
Set the prepared baking sheets aside for later use.
Step 2: Blend the Wet Ingredients
In a large food processor, combine 1 cup of cottage cheese, 2 tablespoons of solid butter (cut into small cubes), 1/3 cup of cane or regular sugar, 1 teaspoon of vanilla extract, 1/2 teaspoon of baking soda, and 2 tablespoons of cornstarch.
Process the mixture on high speed until it becomes smooth, pausing occasionally to scrape down the sides of the bowl as needed.
Step 3: Form the Cookie Dough
Once the wet ingredients are smooth, add 3 1/2 cups of almond flour to the mixture.
Process on low speed until a cookie dough forms, ensuring all ingredients are well combined.
Step 4: Add Chocolate Chips
Stir in 1/2 cup of dark chocolate chips by pulsing a few times in the food processor.
Then, use a spatula to finish mixing, ensuring the chocolate chips are evenly distributed throughout the dough.
Step 5: Scoop and Shape the Cookies
Using a small scoop, portion the cookie dough onto the prepared baking sheets, placing each scoop about 2 inches apart.
If desired, add a few extra chocolate chips on top of each scoop and gently flatten them into small discs.
Step 6: Bake and Cool the Cookies
Bake the cookies in the preheated oven for 14 minutes.
Remove them while they still appear underbaked, puffy, and light in color.
Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a cooling rack to cool completely.
