Preparation Time | 10-15 minutes |
Cooking Time | 120 minutes |
Total Time | 130-135 minutes |
Level of Difficulty | Easy |
Ingredients
- 16 oz small curd cottage cheese
- 1/3 cup allulose
- 1/4 cup cocoa powder
- 1/2 tsp vanilla extract
- 1/4 cup swerve brown sugar
- 3 tbsp allulose
Step 1: Gather the Ingredients
Start by gathering all the necessary ingredients: 1 (16 oz) tub of small curd cottage cheese, 1/3 cup of allulose (or your sweetener of choice), 1/4 cup of cocoa powder, and 1/2 teaspoon of vanilla extract.
Step 2: Prepare the Mixture
Add the cottage cheese to a food processor.
Then, add the allulose, cocoa powder, and vanilla extract to the processor.
This combination will create the base for your ice cream.
Step 3: Blend Until Smooth
Blend the mixture for about 2 to 5 minutes, or until it becomes smooth and well combined.
It’s important to ensure there are no lumps for the best texture in your ice cream.
Step 4: Freeze the Ice Cream Base
Transfer the blended mixture to a container suitable for freezing.
Place it in the freezer and let it freeze for approximately 2 hours.
Step 5: Check and Blend for Smoothness
After 2 hours, remove the container from the freezer and check the consistency of the ice cream.
If you prefer a smoother texture, blend the ice cream again with additional sweetener (like 1/4 cup of Swerve Brown sugar and 3 tablespoons of allulose).
Step 6: Final Freeze and Serve
Return the blended mixture to the container and freeze again if necessary until the desired consistency is achieved.
Once you’re ready to serve, scoop out your keto chocolate cottage cheese ice cream and enjoy!
