Best Cottage Cheese Sourdough Bread

Today, I’m sharing my delicious cottage cheese sourdough bread recipe.

It’s soft, flavorful, and has just the right amount of tang. Plus, the cottage cheese gives it an amazing texture!

Ingredients

  • 185 g cottage cheese (¾ cup)
  • 185 g egg whites (¾ cup)
  • 150 g sourdough starter (¼ cup)
  • 30 g neutral oil (3 tbsp)
  • 325 g bread flour (2 ¼ cups)
  • 10 g salt (1 ½ tsp)
  • 1 egg or egg yolk (for washing)
  • Boiling water
 

Step 1: Blend and Mix Initial Ingredients

In a small blender, add 185 grams of cottage cheese and 185 grams of egg whites.

Blend until smooth.

Pour the mixture into a mixing bowl and add 150 grams of active sourdough starter and 30 grams of neutral oil.

Mix well until fully combined.

 

Step 2: Form the Dough

Add 325 grams of bread flour and 10 grams of salt to the bowl.

Mix until a shaggy dough forms.

Cover the bowl and let the dough rest for 30 minutes.

After resting, knead the dough for 2-3 minutes using a pulling and slapping motion.

Cover and let it rest for another 30 minutes.

Repeat the kneading process for another 2-3 minutes, then cover and let it rest for another 30 minutes.

 

Step 3: Stretch and Fold Process

Perform the first stretch and fold by pulling the dough up and folding it over itself in each cardinal direction, doing 6-8 folds in total.

Cover and let the dough rest for 30 minutes.

For the second stretch and fold, do 4-6 folds, then cover and let it rest for another 30 minutes.

(Optional: Perform a third stretch and fold, doing 4 folds, then cover and let it rest for another 30 minutes).

 

Step 4: Shape the Dough

Lightly flour a work surface and turn the dough out onto it.

Pat the dough into a rectangle.

Fold the left and right sides into the center, then roll it up into a log, pinching the seams closed.

Transfer the shaped dough to a greased 9×5 inch loaf pan, seam side down, and spray the top with oil to prevent sticking.

 

Step 5: Proof the Dough

Cover the dough and let it rest until it fills the loaf pan and is level with or slightly above the edge, which should take about 8-12 hours.

 

Step 6: Bake the Bread

Preheat the oven to 350°F (175°C) and boil some water in a kettle or on the stovetop.

Remove the cover from the dough and brush the top with an egg wash made from one whole egg or one egg yolk.

Pour the boiling water into an oven-safe pan placed next to the bread in the oven.

Bake the bread for 45-50 minutes, or until the internal temperature reaches 190°F (88°C).

 

Step 7: Cool and Serve

Cool the bread in the loaf pan for 5-10 minutes before transferring it to a wire rack to cool completely.

Wait at least 30 minutes before slicing.
