Best Cottage Cheese Stuffed Chicken

Ingredients

  • 4 large chicken breast fillets
  • 500g fresh spinach leaves
  • 200g cottage cheese (choose classic, lactose-free, or protein+)
  • Extra virgin olive oil
  • Chicken seasoning mix
  • Fresh lemons
 

Step 1: Prepare the Chicken Breasts

Preheat the oven to 190°C (375°F).

Place each chicken breast on a cutting board.

With one hand on top of the breast, carefully insert the tip of a sharp knife into the thickest part of the chicken breast and cut 3/4 of the way through to create a pocket (without cutting all the way through).

Place each chicken breast between 2 sheets of cling wrap and flatten with a rolling pin.

Remove the chicken from the cling wrap and rub all over and inside the pocket with chicken seasoning.

Set the chicken aside while you make the filling.

 

Step 2: Make the Filling

Wilt the spinach by placing it in a colander inside the sink and pouring boiling water over it from a kettle.

Pat the spinach dry with a paper towel and finely chop it.

Place the chopped spinach into a bowl, drizzle olive oil over it, spoon in the cottage cheese, squeeze in the juice of half a lemon, and add a generous sprinkling of chicken seasoning.

Mix well to combine.

 

Step 3: Fill and Secure the Chicken Breasts

Spread open each breast like a book and fill them with the cottage cheese and spinach filling.

Fold the breasts back up and secure each with cocktail sticks or string to keep the filling inside while cooking.

 

Step 4: Sear the Chicken Breasts

Heat some olive oil in a pan over medium heat.

Once the oil is hot, fry the chicken breasts for a few minutes on each side until they are golden brown.

This helps to sear the outside and lock in the juices.

 

Step 5: Bake the Chicken Breasts

Transfer the seared chicken breasts to a baking dish.

Bake in the preheated oven for about 20-25 minutes, or until the internal temperature of the chicken reaches 165°F (75°C).

This ensures the chicken is fully cooked and safe to eat.

Remove from the oven and let rest for a few minutes before serving.
