Ingredients
For the casserole:
- 12 oz small pasta shapes (like Ditalini or elbow macaroni)
- 1/2 tsp black pepper (freshly ground is best)
- 1 cup frozen peas (thawed)
- 1 cup shredded mozzarella cheese
- 1/2 tsp salt
For assembly:
- 1 batch homemade mushroom soup (recipe linked in description)
Step 1: Preheat Oven and Prepare Ingredients
Begin by preheating your oven to 375 degrees F.
Next, prepare a batch of Cream of Mushroom Soup following the recipe found here: Homemade Cream of Mushroom Soup Recipe.
Step 2: Cook the Pasta
While the soup simmers, bring a large pot of salted water to a boil.
Cook your pasta for 1 minute less than the package instructions indicate, as the pasta will continue to cook in the oven.
Drain the pasta, reserving about ½ cup of the cooking water.
Step 3: Combine Ingredients
In a large mixing bowl, stir together the prepared cream of mushroom soup, salt, pepper, frozen peas, and ½ cup of shredded mozzarella cheese.
Mix in the cooked pasta, along with 2 tablespoons of the reserved pasta cooking water.
If you find that the mixture is too thick, or if you’re preparing the casserole a day ahead for leftovers, add additional pasta cooking water, 1 tablespoon at a time, until you reach the desired consistency.
Taste the mixture and adjust the salt and pepper as needed.
Step 4: Assemble the Casserole
Transfer the pasta mixture to a casserole dish, spreading it out evenly.
Sprinkle the remaining ½ cup of shredded mozzarella cheese over the top of the mixture.
Step 5: Bake the Casserole
Bake the casserole, uncovered, in the preheated 375 degree F oven for 20-25 minutes, or until the cheese on top is bubbly and slightly browned.
Remove from the oven and let it cool slightly before serving.
