Ingredients
- 8 oz cream cheese
- 1 tablespoon sugar
- 1 cup milk plus 1 tablespoon
- 8 oz frozen whipped topping
- 1 graham cracker crust
- 1 (15 oz) can pumpkin puree
- 2 packages (3.4 oz) vanilla instant pudding
- 1 3/4 teaspoon pumpkin pie seasoning
Step 1: Soften the Cream Cheese and Prepare the Base
Start by leaving 8 oz of cream cheese out at room temperature overnight to soften.
Once the cream cheese is soft, place it in a mixing bowl.
Add 1 tablespoon of sugar and a splash of milk.
Use a mixer to blend these ingredients until well combined and smooth.
Step 2: Incorporate Whipped Topping and Fill the Crust
Thaw 8 oz of frozen whipped topping.
Add half of this thawed topping to your cream cheese mixture and mix again until it is fully incorporated.
Finish mixing by hand to ensure everything is well combined.
Prepare a graham cracker crust (either store-bought or homemade) and transfer the creamy mixture into the crust, spreading it out evenly.
Step 3: Make the Pumpkin Layer
In a separate bowl, add 1 (15 oz) can of pumpkin puree along with 2 packages (3.4 oz each) of instant vanilla pudding mix.
Sprinkle in 1 3/4 teaspoons of pumpkin pie spice.
Next, pour in 1 cup of milk and whisk the mixture until it is smooth and well combined.
Step 4: Assemble the Pie
Pour the pumpkin mixture over the creamy layer in the graham cracker crust, spreading it out evenly to create a smooth top layer.
Place the assembled pie in the refrigerator until the pudding layer is firm, which will take a few hours.
Step 5: Add Topping and Serve
Once the pie has chilled and the pudding layer is firm, take the remaining half of the whipped topping and spread it over the top of the pie.
