Ingredients

  • 125 grams softened butter (at room temperature)
  • 100 grams sugar
  • 1 egg
  • 155 grams all-purpose flour
  • 110 grams hazelnut flour
  • 30 grams hazelnuts

Step 1: Prepare Your Baking Equipment

Place your Large Bonmat on top of your Large Perforated Baking Sheet and set aside.

This setup will be used to bake your cookies evenly.

Step 2: Cream the Butter and Sugar

In the bowl of your stand mixer fitted with the paddle attachment, cream the softened butter and sugar together for 2 minutes on medium-low speed.

Make sure to scrape down the bowl as necessary to ensure everything is well combined.

Step 3: Add the Egg and Flours

Add the egg to the butter and sugar mixture.

Stir on the lowest setting until mostly combined, about 1 minute.

It’s normal for the mixture to look curdled; avoid overmixing.

Gradually add the all-purpose flour and hazelnut flour, continuing to stir on low speed until just combined.

Step 4: Form the Cookie Dough Balls

Scoop about a large tablespoon of dough and roll it between your palms to form a ball approximately 1 inch (2.5 cm) in diameter.

Transfer the cookie dough balls onto your prepared Bonmat, ensuring they are evenly spaced.

Press one hazelnut in the center of each ball.

Step 5: Bake the Cookies

Preheat the oven to 350°F (180°C).

Bake the cookies for 12 minutes, closely monitoring them starting from the 10-minute mark.

The cookies are ready when they appear barely golden around the edges and the tops remain soft.

Step 6: Cool and Enjoy

Once baked, let the Noisettins cool completely on the baking sheet.

When cooled, the cookies are ready to be enjoyed.

Store any leftovers in an airtight container.
