Ingredients
- 2 cups cottage cheese, full fat
- 1/4 cup sugar-free powdered sweetener (or sweetener of choice)
- 1 teaspoon vanilla extract
- 1/4 cup peanut butter, natural & unsweetened
- 2 oz dark sugar-free chocolate or chocolate chips, melted
- 1/4 cup chopped nuts (almonds, pecans, or walnuts)
Step 1: Prepare the Cottage Cheese Mixture
Start by blending 2 cups of full-fat cottage cheese, ¼ cup of sugar-free powdered sweetener (or your preferred sweetener), 1 teaspoon of vanilla extract, and ¼ cup of natural unsweetened peanut butter in a blender.
Blend until the mixture is smooth and creamy.
Step 2: Prepare the Baking Sheet
Line an 18 x 13 inch (45 x 33 cm) baking sheet with parchment paper.
This will prevent the mixture from sticking and make it easier to remove once frozen.
Step 3: Spread the Mixture
Pour the cottage cheese mixture onto the prepared baking sheet and spread it out evenly using a spatula.
Make sure the layer is smooth and even for consistent freezing.
