Level of Difficulty | Easy |
Ingredients
- 1 1/4 cups plain greek yogurt
- 1/2 cup olive oil
- 1 tablespoon white vinegar
- 1 clove garlic
- 1 jalapeño, ribs and seeds removed
- 1/4 cup fresh parsley
- 1 tablespoon dried dill
- 1/2 teaspoon onion powder
- 1 teaspoon kosher salt
Step 1: Measure and Combine Ingredients
Gather all your sauce ingredients: 1 and 1/2 cups of cottage cheese, half a cup of milk, 1 and 1/2 teaspoons of Italian seasoning, half a cup of grated Parmesan cheese, half a teaspoon of black pepper, and a pinch of salt.
Place these ingredients into a small blender or food processor.
Step 2: Blend to Smoothness
Blend all the sauce ingredients together until the mixture becomes smooth and creamy.
If the mixture is too thick, add a little more milk or some higher protein bone broth to reach your desired consistency.
Step 3: Cook the Sauce
Transfer the blended sauce into a stove top pan set on low heat.
Melt 1 and 1/2 tablespoons of butter in the pan.
Once the butter has melted, add a tablespoon of minced garlic and let it cook for a few minutes until fragrant.
Step 4: Thicken the Sauce
Pour the blended cottage cheese mixture into the pan with the garlic butter.
Add a teaspoon of corn starch and stir continuously as the sauce heats up and begins to thicken.
Keep the heat on low to avoid ruining the sauce.
Step 5: Cook the Pasta
While the sauce is heating up, cook your favorite pasta according to the package instructions.
Once the pasta is done, drain it well.
Step 6: Combine Pasta and Sauce
Add the cooked pasta to the pan with the Alfredo sauce.
Mix everything around for a couple of minutes to ensure the pasta is evenly coated with the sauce.
Optionally, add any additional ingredients like cooked protein or crushed red pepper for extra flavor.
Step 7: Serve and Enjoy
Serve the pasta hot.
If you need to reheat it later, simply add a bit of milk and reheat over low heat until smooth again.
Enjoy your high-protein, creamy Cottage Cheese Alfredo Sauce!
