Ingredients
For the dry mix:
- 0.5 tsp salt
- 1.5 cups all-purpose flour (I use King Arthur all-purpose flour)
For the wet mix:
- 3 eggs (large, at room temperature)
- 0.5 cup unsweetened yogurt (plain, non-fat Greek yogurt works best)
- 0.25 cup lemon juice (freshly squeezed for best flavor)
- 0.5 cup cane sugar
- 2 tsp vanilla extract
- 0.5 cup brown sugar
For the topping:
- powdered sugar (sifted for a smooth dusting)
Step 1: Prepare the Oven and Dry Ingredients
Preheat your oven to 350°F (175°C).
In a bowl, combine 1.5 cups of all-purpose flour and 0.5 teaspoons of salt.
Mix these dry ingredients together well to ensure even distribution.
Step 2: Whisk the Wet Ingredients
In a separate bowl, whisk together 3 room-temperature eggs.
Add 0.5 cups of brown sugar and 0.5 cups of cane sugar to the eggs and mix until combined.
If you don’t have brown sugar, you can use 1 cup of cane sugar instead.
Stir in 0.5 cups of unsweetened full-fat yogurt into the egg and sugar mixture, followed by 2 teaspoons of vanilla extract.
Mix thoroughly until everything is well combined.
Step 3: Incorporate Lemon Juice
Squeeze in about 0.25 cups of lemon juice into the wet mixture and stir well until it’s fully incorporated.
