Preparation Time 15-20 minutes
Cooking Time 50-55 minutes
Total Time 65-75 minutes
Level of Difficulty Easy

Ingredients

  • 1 cup plain greek yogurt
  • 1 cup granulated sugar
  • 1/2 cup extra virgin olive oil
  • 2 prepared flaxseed eggs
  • 2 teaspoons vanilla essence
  • 1 teaspoon apple cider vinegar
  • 2 teaspoons baking powder
  • 1 and 1/2 cups plain flour
  • 1/2 teaspoon salt

Step 1: Preheat Oven and Prepare Loaf Pan

Preheat your oven to 350°F (180°C).

Line a 9-inch or 8-inch loaf pan with parchment paper and lightly grease it with non-stick cooking spray.

Prepare the flax eggs according to package instructions and set aside to thicken.

Step 2: Combine Wet Ingredients

In a large bowl, mix together Greek yogurt, sugar, olive oil, vanilla extract, and apple cider vinegar until well combined.

Ensure that all the ingredients are thoroughly mixed for a consistent batter.

Step 3: Activate Leavening Agent

Add the baking powder to the wet mixture and stir well.

Let the mixture sit for about 5 minutes until it begins to foam.

This step helps to activate the leavening agent, ensuring a nice rise for your cake.

Step 4: Add Dry Ingredients

Gradually add the all-purpose flour and salt to the wet mixture.

Mix until just combined to avoid overmixing, which can make the cake dense.

Step 5: Bake the Cake

Pour the batter into the prepared loaf pan and level the top with a spatula.

Bake in the preheated oven for 50 to 55 minutes, or until a toothpick inserted into the center comes out clean.

Step 6: Cool and Serve

Once baked, remove the pan from the oven and let it cool on a wire rack for 20 to 30 minutes.

Carefully remove the cake from the pan and allow it to cool completely on the rack before slicing.

Optionally, sprinkle powdered sugar on top before serving to add a touch of sweetness.
