Ingredients
- 1 cup plain greek yogurt
- 1 cup granulated sugar
- 1/2 cup extra virgin olive oil
- 2 prepared flaxseed eggs
- 2 teaspoons vanilla essence
- 1 teaspoon apple cider vinegar
- 2 teaspoons baking powder
- 1 and 1/2 cups plain flour
- 1/2 teaspoon salt
Step 1: Preheat Oven and Prepare Loaf Pan
Preheat your oven to 350°F (180°C).
Line a 9-inch or 8-inch loaf pan with parchment paper and lightly grease it with non-stick cooking spray.
Prepare the flax eggs according to package instructions and set aside to thicken.
Step 2: Combine Wet Ingredients
In a large bowl, mix together Greek yogurt, sugar, olive oil, vanilla extract, and apple cider vinegar until well combined.
Ensure that all the ingredients are thoroughly mixed for a consistent batter.
Step 3: Activate Leavening Agent
Add the baking powder to the wet mixture and stir well.
Let the mixture sit for about 5 minutes until it begins to foam.
