Ingredients
- 5.3 oz plain full-fat greek yogurt
- 1.5 teaspoons kosher salt
- 2 oz cooking oil
- 2-3 large garlic cloves (minced or pressed)
- 1 tablespoon chopped fresh dill
- Zest of 1 lemon
- Juice from 1/2 lemon (about 1.5 to 2 oz)
Step 1: Measure and Combine the Base Ingredients
Begin by pouring the oil into a large liquid measuring cup.
Next, scoop the Greek yogurt out of its container and add it to the same cup.
This will serve as the creamy base for your marinade.
Step 2: Zest and Juice the Lemon
Using a microplane, zest the lemon directly over the measuring cup to catch all the zest.
Rub the lemon against the microplane in short swipes, being sure to only scrape off the vibrant yellow skin and not the white pith underneath.
You may need to wipe the zest off the bottom of the microplane with your finger to get it all off.
After zesting, use a sharp knife and cutting board to cut the lemon in half.
Juice half the lemon into the measuring cup, setting aside the other half for future use.
Step 3: Prepare and Add Fresh Dill
Finely chop the fresh dill fronds using the knife and cutting board.
Measure out the chopped dill and add it to the measuring cup with the other ingredients.
Fresh dill adds a nice, aromatic flavor to the marinade.
Step 4: Add Garlic and Seasoning
Use a garlic press to press the garlic directly into the measuring cup.
Alternatively, you can mince the garlic finely with your knife and add it in.
Add the kosher salt to the cup as well.
