Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts
- 1/4 cup plain greek yogurt
- 4 grated garlic cloves
- Juice of half a lemon
- 2 teaspoons paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon oregano or italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Cooking oil
Step 1: Prepare the Chicken Breasts
Place chicken breasts on a couple of paper towels and pat them dry.
To ensure even cooking, pound the thicker end of the chicken breasts to match the thinner end or butterfly the chicken breasts.
Step 2: Marinate the Chicken
In a medium bowl, combine all the ingredients for the yogurt marinade.
Add the chicken breasts to the bowl and toss to coat all pieces completely with the yogurt mixture.
Cover the bowl with plastic wrap and refrigerate for at least one hour, up to 24 hours, to allow the flavors to meld.
Step 3: Preheat and Prepare for Cooking
When you are ready to cook, remove the chicken bowl from the refrigerator and let it sit for 15 minutes to remove the chill.
Meanwhile, heat a large skillet over medium-high heat.
Once the skillet is hot, add oil and swirl it around the pan to coat evenly.
Step 4: Cook the Chicken
Using a fork, lift the chicken pieces out of the marinade, allowing any excess yogurt mixture to drip back into the bowl.
Place the chicken pieces in the skillet, making sure not to overcrowd the pan.
Cook for 5 to 7 minutes on the first side, then flip and cook for another 5 to 7 minutes on the other side.
The chicken is done when its internal temperature reaches 165°F.
If you butterflied the chicken, adjust the cooking time to about 3 to 4 minutes per side.
Step 5: Rest and Serve
Remove the cooked chicken from the pan and place it on a plate.
Cover the chicken with foil or another plate to keep it warm while you cook any remaining pieces.
