- 1 large whole egg
- 1 large egg white
- 2 ripe bananas
- 1 teaspoon vanilla extract
- 1 cup unsweetened applesauce
- 1 teaspoon ground cinnamon
- 1 1/2 cups cottage cheese
- 2 scoops vanilla protein powder
- 3/4 teaspoon baking soda
- A pinch of salt
- 1 tablespoon sugar-free syrup (optional)
- Non-stick cooking spray (for baking)
- Sugar-free chocolate chips (for topping, optional)
Step 1: Preheat the Oven
Begin by preheating your oven to 350°F (175°C).

Step 2: Combine the Ingredients
In a large bowl, food processor, or blender, combine the following ingredients: 3/4 cup of rolled oats, 1 large whole egg, 1 large egg white, 2 ripe bananas, 1 teaspoon of vanilla extract, 1 cup of unsweetened applesauce, 1 teaspoon of ground cinnamon, 1 and 1/2 cups of cottage cheese, 2 scoops of vanilla protein powder, 3/4 teaspoon of baking soda, a pinch of salt, and any optional sweetener you prefer (such as 1 tablespoon of sugar-free syrup, honey, monk fruit extract, brown rice syrup, or Stevia).
Mix the ingredients until smooth, being careful not to overmix.
Step 3: Prepare the Baking Dish
If you are mixing by hand, you can use oat flour or make some by blending rolled oats until fine.
Next, prepare your baking dish by coating it with non-stick cooking spray or lining it with parchment paper to prevent sticking.
Step 4: Pour and Top the Mixture
Pour the combined mixture into the prepared baking dish.
Feel free to top the mixture with your choice of toppings, such as sugar-free chocolate chips, for added flavor and texture.
