Suggestions for Ingredient Substitution
All-purpose flour can be replaced with whole wheat pastry flour or a gluten-free all-purpose flour blend for those with gluten sensitivities. Use a 1:1 ratio, but be aware that the texture may be slightly denser with whole wheat flour. For gluten-free options, add 1/4 teaspoon of xanthan gum per cup of flour to improve texture.
Whole milk can be substituted with plant-based alternatives like almond, soy, or oat milk for a dairy-free version. Choose unsweetened varieties and use the same amount as called for in the recipe. These alternatives may slightly alter the flavor and richness of the rolls.
Brown sugar can be replaced with coconut sugar or date sugar for a less refined option. Use the same amount as called for in the recipe. These substitutions will provide a similar caramel-like flavor while offering some additional nutrients. Keep in mind that the color of the filling may be slightly darker with these alternatives.

Ingredients
- 2 cups all-purpose flour (240g)
- 3 tablespoons granulated sugar (38g)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 5 tablespoons cold unsalted butter, + additional 2 tablespoons for baking
- 3/4 cup whole milk (178ml)
- 2/3 cup brown sugar (133g)
- 3 tablespoons granulated sugar (38g)
- 2 teaspoons cinnamon
- 4 tablespoons melted butter
- 1/2 teaspoon vanilla extract
- 3 oz cream cheese, softened (85g)
- 3 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar (190g)
- 1 tablespoon milk (15ml)
Step 1: Prepare the Dry Ingredients and Butter
Preheat your oven to 375°F (190°C).
In a large bowl, combine 2 cups of all-purpose flour, 3 tablespoons of granulated sugar, 1 tablespoon of baking powder, and 1 teaspoon of salt.
Next, grate 5 tablespoons of very cold unsalted butter into the flour mixture, or cut it in using a pastry cutter.
Stir with a spoon or spatula until the butter is incorporated, forming small pieces within the flour mixture.
Step 2: Create the Dough
Add ¾ cup of whole milk to the flour and butter mixture.
Stir gently until the dough starts to cling together, ensuring not to overmix.
Turn the dough out onto a well-floured surface and work it into a cohesive ball, handling it as minimally as possible.
Roll the dough into a rectangle approximately 10×12 inches, using a rolling pin.
Add more flour as needed to prevent sticking.
Step 3: Prepare and Apply the Filling
In a separate bowl, mix ⅔ cup of brown sugar, 3 tablespoons of granulated sugar, and 2 teaspoons of cinnamon.
Stir in 4 tablespoons of melted butter and ½ teaspoon of vanilla extract until it forms a paste.
Spread this filling evenly over the rolled-out dough, leaving a ¼-inch perimeter around the edges.
Starting from one of the longer ends, tightly roll the dough into a log and press the edge to seal.
Step 4: Slice and Arrange the Cinnamon Rolls
Melt 2 tablespoons of butter in a 9-inch pie pan using the microwave.
Cut the rolled dough into slices about 1 inch thick and arrange them in the prepared pie pan, leaving gaps between each slice.
This ensures even baking.
Step 5: Bake the Cinnamon Rolls
Place the pie pan with the cinnamon rolls into the preheated oven and bake for 28-30 minutes, or until the rolls are lightly browned around the edges.
Step 6: Make the Icing and Serve
While the cinnamon rolls are baking, prepare the icing.
Mix 3 ounces of softened cream cheese, 3 tablespoons of softened butter, and 1 teaspoon of vanilla extract until smooth.
Gradually add 1½ cups of powdered sugar, mixing until fully combined.
Add 1 tablespoon of milk to thin the icing to your preferred consistency.
Once the cinnamon rolls have finished baking, allow them to cool for 5 minutes before spreading the icing generously over the top.
Let the rolls cool slightly before serving to help them hold together better.
