Preparation Time | 15-20 minutes |
Cooking Time | 40-50 minutes |
Total Time | 55-70 minutes |
Level of Difficulty | Easy |
Ingredients
- 1 can pumpkin puree
- 1 cup unsweetened almond milk
- 3 eggs
- 1 splash vanilla extract
- 1/2 cup organic sugar (or coconut sugar)
- 1/4 cup pure maple syrup
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp allspice
- 1 pinch salt
Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare it for baking the pumpkin pie.
This will ensure the oven is ready when you have finished mixing the pie filling.
Step 2: Combine Wet Ingredients
In a mixing bowl, add one can of pumpkin puree (ensure it’s not pumpkin pie filling), 1 cup of unsweetened almond milk, and three cracked eggs.
Pour in a splash of vanilla extract to enhance the flavor.
Whisk these ingredients together until they are well combined.
Step 3: Add Sweeteners and Spices
To the wet mixture, incorporate 1/2 cup of organic sugar (or coconut sugar) and 1/2 cup of pure maple syrup.
Add the following spices: 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of ginger, and 1/2 teaspoon of allspice.
Don’t forget to add a pinch of salt to balance the flavors.
Whisk all the ingredients together until the mixture is smooth and evenly combined.
Step 4: Prepare the Pie Pan
Take a 9-inch pie pan and grease it lightly to prevent sticking.
If you prefer a crustless pie, you can proceed directly to pouring in the mixture.
Otherwise, ensure your crust is ready in the pan before adding the filling.
Step 5: Bake the Pie
Carefully pour the pumpkin mixture into the prepared pie pan.
Place the pan in the preheated oven and bake for 40 to 50 minutes, or until the filling is set and no longer jiggly in the center.
A toothpick inserted into the center should come out mostly clean.
Step 6: Cool and Serve
Once the pie is baked, remove it from the oven and allow it to cool completely on a wire rack.
This will help the filling to firm up.
Once cooled, slice the pie and serve.
Enjoy this delicious, wholesome dessert!
