Use a plant-based butter alternative to maintain a creamy texture while accommodating dairy-free diets. For the liver, beef or pork liver can be used instead of chicken liver, offering a stronger flavor and different nutritional profile. Ingredients
For the mashed potatoes:
- 2 lb potatoes (peeled and diced into 1-inch chunks)
- 1.5 cups hot milk (whole milk recommended for creaminess)
- 1/2 tsp salt
- Water
- 2 tbsp butter
For the chicken liver:
- 1/2 tsp salt
- 1 tsp chopped garlic (freshly minced for best flavor)
- 500 grams chicken liver (rinsed and trimmed)
- 1 tbsp butter (I like Kerrygold for this)
- 1/4 tsp ground black pepper
- 3 medium onions (finely chopped)
- 2 tbsp olive oil
Step 1: Prepare the Ingredients
Start by washing the chicken liver very well with cold water to ensure it’s clean.
Cut the onions into slices and finely chop the garlic in preparation for cooking.
Step 2: Sauté Onions and Garlic
In a pan over medium heat, melt some butter and add a little oil.
Add the sliced onions and cook them until they begin to soften.
Then, add the chopped garlic to the pan and continue cooking for 1 minute, stirring occasionally to prevent browning.
Step 3: Cook the Chicken Liver
After draining the liver, place it into a separate pan with a bit of oil.
Roast the liver on both sides by turning each piece, being careful not to stir in the pot.
Instead, gently shake the pot with back and forth motions to keep the onions from burning.
This will allow the liver to cook through evenly.
Step 4: Add Spices and Simmer
In a glass, mix all your spices—excluding the salt—with 1 cup of water.
Pour this mixture over the liver in the pan and bring to a boil over low heat for approximately 10 minutes.
Try to mix as little as possible to prevent breaking the liver.
Once finished simmering, season with salt to taste.
Step 5: Prepare Mashed Potatoes
Place peeled, cubed, and washed potatoes into a saucepan.
Cover the potatoes with cold water, add a touch of salt, and bring to a boil.
Cook until they are tender, about 25 minutes.
Once tender, drain the potatoes thoroughly.
Step 6: Make the Mashed Potatoes Creamy
Using a potato masher or electric mixer, slowly mash the drained potatoes until smooth.
Gradually add milk and butter, mixing continuously until the mash is creamy and well-blended.
Step 7: Serve and Garnish
Plate the cooked chicken liver alongside a serving of the mashed potatoes.
