Best Pistachio Christmas Cookies Recipe

Today, I’m excited to share my delightful pistachio Christmas cookies.

These little green gems are crunchy on the outside and soft on the inside.

They’re perfect for sharing or enjoying with a cup of cocoa.

Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 3/4 cup pistachios (finely chopped)
  • 1 pinch salt
  • 1/3 cup + 2 tablespoons unsalted butter (softened)
  • 1 large egg
 

Step 1: Preheat the Oven

Preheat your oven to 350°F (180°C) to prepare for baking.

 

Step 2: Prepare the Dry Ingredients

In a mixing bowl, combine 1 cup plus 2 tablespoons of all-purpose flour, ½ cup of granulated sugar, ½ teaspoon of baking powder, and a pinch of salt.

Finely chop ¾ cup of pistachios, reserving 1 tablespoon aside for topping the cookies.

Add the chopped pistachios (except the reserved tablespoon) to the flour mixture and whisk together until evenly distributed.

 

Step 3: Mix Wet Ingredients and Combine

Add ⅓ cup plus 2 tablespoons of softened unsalted butter and 1 large egg to the bowl.

Beat the mixture until well combined, either using an electric mixer or a fork if mixing by hand.

The dough should start to come together and be well incorporated.

 

Step 4: Form and Refrigerate the Dough

Lightly flour a flat surface and transfer the dough onto it.

Form the dough into a ball; it should be soft but not sticky.

Wrap the dough in plastic wrap and refrigerate for about 1 hour to allow it to firm up.

 

Step 5: Shape and Prepare the Cookies

After an hour, remove the dough from the fridge.

Divide it into small balls, approximately the size of golf balls (you should get around 21 balls).

Place the balls on a baking tray lined with parchment paper, or grease the tray if parchment is not available.

Use a fork dipped in flour to lightly flatten the tops of the cookies.

Sprinkle the reserved chopped pistachios on top of each cookie, pressing them in slightly to ensure they stick.

 

Step 6: Bake and Cool

Place the tray of cookies back in the fridge while the oven finishes preheating.

Bake the cookies in the preheated oven for 10 to 12 minutes, or until they are lightly golden.

Once baked, let the cookies cool on the baking sheet for about 5 to 10 minutes before transferring them to a cooling rack to finish cooling completely.
