Ingredients
- 1 sheet of pastry crust
- 1 3/4 cups canned pumpkin
- 3/4 cup packed brown sugar
- 1/2 teaspoon salt
- 1 teaspoon cinnamon powder
- 1 teaspoon pumpkin pie seasoning
- 2 beaten eggs
- 1 cup heavy cream
Step 1: Prepare the Pie Crust
Preheat your oven to 400°F.
Roll out your pie crust and trim/crimp it to fit your pie dish.
Prick the crust a few times with a fork to prevent bubbling.
Step 2: Par-Bake the Crust (Optional)
If you prefer to par-bake your crust, line it with foil and fill it with pie weights or beans.
Bake for about 10 minutes, then remove the foil and weights and bake for an additional 5-10 minutes, or until the crust is just slightly golden.
Remember, you only want it to be partially baked.
Set the crust aside while you prepare the filling.
Step 3: Cook the Pumpkin
In a saucepan, stir the pumpkin puree over medium-high heat for 15 minutes or until it begins to darken and caramelize.
This step deepens the flavor of the pumpkin.
Step 4: Add Spices and Sweeteners
To the caramelized pumpkin, add sugar, salt, cinnamon, and pumpkin pie spice.
Mix well and continue cooking for about 2 minutes to blend the flavors thoroughly.
