Ingredients
- 1 pound cottage cheese (450g)
- 1 cup plus 4 tablespoons sifted all-purpose flour (155g)
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 eggs
- 4 tablespoons sugar
- 1/2 teaspoon vanilla essence
- 1/2 cup flour for dusting
- Oil or butter for frying
- 340 grams fresh strawberries, cut into quarters (¾ pound)
- 1 cup sugar
- Zest of 1 medium lemon
- 1 tablespoon fresh lemon juice
- 2 tablespoons water
- 1 teaspoon cornstarch
Step 1: Prepare the Cottage Cheese and Dry Ingredients
Start by draining the cottage cheese as thoroughly as possible using a strainer or colander.
Set the drained cottage cheese aside.
In a separate bowl, combine the sifted flour, baking powder, and salt.
Set these dry ingredients aside for later use.
Step 2: Blend and Mix the Wet Ingredients
In a small food processor, blend the drained cottage cheese, eggs, sugar, and vanilla extract until the cottage cheese is almost smooth.
Transfer the blended mixture to a mixing bowl.
Using a spatula, stir in the flour and baking powder mixture until combined.
The dough should be sticky but not runny.
If necessary, add more flour to achieve the right consistency.
Step 3: Form and Shape the Dough Balls
Place 1/2 cup of flour on a shallow plate or in a bowl.
Using a medium cookie scoop, scoop a ball of the dough and roll it in the flour.
Continue this process to form 8 to 10 dough balls.
With hands coated in flour, gently tap each ball to remove excess flour and flatten them slightly to shape them into patties.
Step 4: Fry the Patties
Heat some oil or butter in a skillet over low-medium heat.
Fry the shaped patties in the skillet until both sides are golden brown.
After frying, place the patties on paper towels to absorb any excess oil.
This step ensures the patties are crispy but not greasy.
Step 5: Prepare the Strawberry Sauce
In a medium saucepan, combine the quartered strawberries with sugar.
Stir the mixture until well combined.
