Ingredients
- 2 tablespoons extra virgin olive oil
- 1/2 large yellow onion, coarsely chopped
- 2 garlic cloves, chopped
- 1 pound apples, cored and coarsely chopped (about 2 large or 3 small apples)
- 4 pounds fresh tomatoes, coarsely chopped (approximately 14-16 roma tomatoes)
- 2 bay leaves
- Salt and pepper to your preference
Step 1: Sauté the Onions and Garlic
Heat olive oil in a large pot over medium heat.
Add onions and garlic, and sauté until the onion is translucent, about 3 minutes.
Make sure to stir occasionally to prevent burning.
Step 2: Add Main Ingredients
Add apples, tomatoes, bay leaves, salt, and pepper to the pot, and stir to combine.
Allow the mixture to cook, stirring occasionally, until the apples are very soft and the tomatoes have released most of their liquid, which should take about 45 minutes.
Step 3: Purée the Soup
Remove the pot from heat and discard the bay leaves.
Using an immersion blender, carefully purée the soup until it reaches a smooth consistency.
This may take a few minutes, depending on the chunkiness of the ingredients.
Step 4: Adjust Seasoning and Serve
Taste the soup and add more salt if necessary.
Serve immediately, garnished with a drizzle of good olive oil and a bit of fresh cracked pepper if desired.
