Best Tomato Soup with Bell Pepper

Today, I’m excited to share my favorite recipe: tomato soup with bell pepper.

It’s cozy, delicious, and super easy to whip up.

Ingredients

  • 4 red bell peppers
  • 3 tomatoes
  • 1 small onion
  • 4 to 5 cloves of garlic
  • Olive oil
  • Salt
  • Pepper
  • 6 ounces tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon dried basil
  • 1.5 cups water or stock
  • Hemp seeds
  • Fresh basil

Step 1: Prepare the Vegetables

Preheat your oven to broil.

Cut four red bell peppers in half and remove the seeds.

Place the bell peppers cut side down on a baking tray.

Slice three tomatoes and add them to the baking tray along with one small onion.

Take four to five cloves of garlic, slice off the bottom end (do not peel), and wrap them in aluminum foil with a drizzle of olive oil.

Step 2: Season and Broil the Vegetables

Drizzle olive oil over all the vegetables on the baking tray and season them with salt and pepper, ensuring both sides are well coated.

Make a small spot for the wrapped garlic on the baking tray.

Place the tray in the oven and broil the vegetables for 25 to 30 minutes, or until the tops are charred black.

Step 3: Steam and Peel the Vegetables

Once the bell peppers are charred, remove them to a bowl and cover with plastic wrap for about 20 minutes to steam and loosen the skin.

Once the other vegetables are cool enough to handle, remove their skins and add them to a Vitamix.

Squeeze the roasted garlic out of its peel and add it to the Vitamix.

Step 4: Blend the Ingredients

Remove the skins from the steamed bell peppers and add them to the Vitamix.

Add six ounces of tomato paste, one tablespoon of balsamic vinegar, one teaspoon of dried basil, and one and a half cups of water or stock to the Vitamix.

Blend all the ingredients until smooth and the soup has a creamy consistency.

Step 5: Serve the Soup

Pour the blended soup into bowls.

Top each serving with a drizzle of olive oil, a sprinkle of pepper, some hemp seeds, and fresh basil for garnish.

Serve hot and enjoy your delicious, roasted vegetable soup!
