Ingredients
- 2-3 tablespoons cooking oil
- 3 onions, peeled and chopped
- 5 large tomatoes, peeled and chopped
- 2 cans tomato sauce (15-16 ounces each)
- 1 can tomato paste (3 ounces)
- 3-4 cups water
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 3 eggs
- 1 tablespoon oil
- 1/2 – 3/4 cup flour
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Step 1: Sauté the Onions and Cook the Tomatoes
Begin by heating 2-3 tablespoons of oil in a large soup pot over medium heat.
Once the oil is hot, add 3 diced onions to the pot and sauté them until they are translucent, which should take about 5-6 minutes.
Next, add 5 peeled and diced tomatoes to the pot and cook until they soften, stirring occasionally to prevent sticking.
Step 2: Add Tomato Sauces and Water
Once the tomatoes are soft, stir in 2 cans of tomato sauce and 1 can of tomato paste.
Follow this by adding 3-4 cups of water, ½ teaspoon of salt, and 1 teaspoon of sugar.
Mix everything well and allow the mixture to cook for 45 minutes, letting the flavors meld together.
Step 3: Blend the Soup
After the soup has cooked for 45 minutes, allow it to cool slightly.
Carefully blend the soup until smooth, either by using an immersion blender directly in the pot or by transferring the soup to a countertop blender in batches.
Taste the soup and adjust the seasoning as needed.
If you prefer a thinner consistency, you can add ½ to 1 cup of water at this stage.
Step 4: Bring the Soup Back to a Boil
Once the soup is blended and seasoned to your liking, return it to the pot (if you used a countertop blender) and bring the soup back to a boil over medium heat.
Step 5: Prepare and Add the Dumplings
While the soup is heating up, prepare the dumplings.
In a mixing bowl, whisk together 3 eggs, 1 tablespoon of oil, ½ teaspoon of kosher salt, and ¼ teaspoon of black pepper.
Gradually add ½ to ¾ cup of flour to the egg mixture, mixing until a thick but runny batter forms.
Step 6: Cook the Dumplings
Once the soup is at a rolling boil, drop teaspoons of the batter into the boiling soup.
The dumplings should cook in the hot soup, firming up and floating to the surface when they are done.
Step 7: Serve the Soup
After the dumplings are fully cooked, give the soup a final stir and serve hot.
