Total Time | 40-55 minutes |
Level of Difficulty | Easy |
Ingredients
- 1 tablespoon cooking oil
- 500g lean ground beef (17.5 ounces)
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large spanish onion (or two medium yellow onions, diced)
- 1 red bell pepper (diced)
- 1 yellow bell pepper (diced)
- 1 carrot (diced)
- 1/2 teaspoon salt and 1/2 teaspoon black pepper
- 4 minced garlic cloves
- 1 can tomato paste (156ml or 5.3oz)
- 1 can crushed tomatoes (796ml or 26.9oz)
- 2 tablespoons worcestershire sauce
- 2 cups beef broth (475ml)
- 2 tablespoons italian seasoning mix
- 3 tablespoons brown sugar
Step 1: Brown the Beef
Heat the oil in a large pot or Dutch oven over medium-high heat.
Once hot, add the beef along with half a teaspoon each of salt and pepper.
Brown the beef, stirring to break it up and mix with the seasonings.
Once browned, remove the beef from the pot using a slotted spoon, leaving the fat and oil behind, and set aside.
Step 2: Cook the Vegetables
Add the chopped onion, bell peppers, and carrots to the pot.
Season with half a teaspoon each of salt and pepper.
Cook until the vegetables start to soften, stirring occasionally, about 10 minutes.
Stir in the minced garlic and cook for another minute or two.
Step 3: Add and Combine Remaining Ingredients
Add the tomato paste, crushed tomatoes, Worcestershire sauce, beef stock, Italian seasoning, and brown sugar to the pot.
Stir well to combine all ingredients.
Bring the pot to a boil, then reduce the heat and let simmer for 10 minutes.
Step 4: Optional – Puree the Soup
If you prefer a smoother texture, use an immersion blender to puree the soup to your desired consistency.
This step is optional but recommended for a creamier finish.
Step 5: Re-Add Beef and Finish Cooking
Add the cooked ground beef back into the pot.
Cook for an additional 5 minutes to warm the beef through.
Stir occasionally to ensure everything is evenly heated.
Step 6: Serve and Enjoy
Once heated through, ladle the soup into bowls and serve hot.
Enjoy your hearty and flavorful beef soup!
