Ingredients
For the crust base:
- 1 graham cracker pie crust (6 oz)
- 1/2 cup chopped pecans (toasted for more flavor)
- 1/4 cup caramel sauce (I like Ghirardelli Premium Caramel Sauce)
For the filling:
- 1.5 cups whipped topping, thawed
- 1/2 tsp nutmeg
- 2 packets (3.4 oz each) vanilla instant pudding mix
- 1 cup pumpkin puree (I use Libby’s pumpkin puree)
- 1 tsp cinnamon
- 1 cup chilled milk (whole milk for richness)
For the topping:
- 2 tbsp caramel sauce
- 2 tbsp chopped pecans
- 1/4 cup toffee bits
- 1.5 cups whipped topping, thawed
Step 1: Prepare the Pie Crust Base
Start by pouring 1/4 cup caramel topping onto the bottom of the pie crust.
Then, sprinkle 1/2 cup of nuts over the caramel topping.
This will form a delicious, crunchy layer at the base of your pie.
Step 2: Make the Filling
In a large bowl, whisk together the next 5 ingredients until they are well blended.
You can choose any combination of compatible ingredients such as pudding mix, milk, softened cream cheese, or other wet ingredients.
After everything is well-mixed, gently fold in 1-1/2 cups of whipped topping until combined.
Step 3: Assemble the Pie
Spoon the prepared filling into the pie crust over the caramel and nuts layer.
