Let’s dive in and whip this up!

Preparation Time | 30-60 minutes |
Cooking Time | 15-30 minutes |
Total Time | 45-90 minutes |
Level of Difficulty | Medium |
Ingredients
- Dry beans (or 2 cans of regular beans)
- Baking soda
- 1/2 cup boiled water
- 1/4 cup lemon juice
- Cottage cheese
- Olive oil
- Tahini
- Salt
- Cumin
- Cayenne pepper
- Chickpeas
- Garlic
Step 1: Prepare the Chickpeas
Soak dry chickpeas overnight in water if you are using them.
If you’re short on time, you can use two cans of regular chickpeas to expedite the process.
If using dry chickpeas, the next day, drain and boil them with a teaspoon of baking soda to help break down the skins, resulting in a smoother hummus.
Step 2: Mix Lemon Water
Once the chickpeas are boiled, save about ½ cup of the boiling water.
In a separate bowl, mix ¼ cup of that water with freshly squeezed lemon juice to create a lemon water mixture that will enhance the flavor of your hummus.
Step 3: Blend Cottage Cheese Mixture
In a food processor, blend cottage cheese and olive oil until the mixture is smooth.
This will add creaminess to your hummus.
Then, add tahini to this cottage cheese and olive oil mixture and blend until well combined.
Step 4: Process the Chickpeas
In the same food processor (no need to clean it), add the boiled chickpeas, salt, cumin, and a touch of cayenne pepper.
Blend until the chickpeas reach about 75% smoothness, keeping some texture in the hummus.
Step 5: Combine Everything
Add the prepared lemon water and garlic to the processed chickpeas and blend for about a minute.
Gradually introduce the tahini, olive oil, and cottage cheese mixture to the chickpeas while blending, ensuring everything is well mixed and fully incorporated.
Step 6: Serve or Refrigerate
Once the hummus is thoroughly blended and has a creamy consistency, you can serve it immediately.
If you prefer a thicker hummus, refrigerate it for a few hours.
For a more liquidy texture, add more of the saved boiled water until you reach your desired consistency.
