Ingredients
For the potatoes:
- 1 tsp salt
- 1/4 cup fresh chives (finely chopped)
- 2 lb yellow potatoes (peeled and cut into 1-inch chunks)
- 1/4 cup unsalted butter (I like Kerrygold unsalted butter for this)
For the cottage cheese mixture:
- 1 tsp garlic powder
- 1/4 cup milk
- 1 cup cottage cheese (full-fat for extra creaminess)
Step 1: Prepare the Potatoes
Start by peeling the potatoes (Yukon Gold or yellow flesh recommended).
Cut the potatoes in half, then cut each half into quarters.
Place the cut potatoes into boiling water and cook until tender, which should take about 15-20 minutes.
Step 2: Make the Cottage Cheese Mixture
While the potatoes are cooking, prepare the cottage cheese mixture.
In a blender or using an immersion blender, combine cottage cheese, milk, salt, and garlic powder.
Blend until the mixture is smooth and creamy.
Step 3: Mash the Potatoes
Once the potatoes are tender, drain them and transfer to a large bowl.
While the potatoes are still hot, add butter and break it apart to help it melt.
Using a hand mixer on the lowest speed, begin mashing the potatoes until they are broken apart and the butter is well-mixed in.
Step 4: Incorporate the Cottage Cheese Mixture
With the hand mixer still on the lowest speed, add the blended cottage cheese mixture to the mashed potatoes.
Continue mixing until the cottage cheese mixture is well incorporated and the potatoes reach a creamy consistency.
Step 5: Add Final Touches and Serve
Stir in some chopped chives to the mashed potatoes and give it a quick mix.
Transfer the mashed potatoes to a serving platter, then flatten them slightly.
Sprinkle fresh herbs on top for garnish before serving.
