Possible Ingredient Alternatives

Ground beef can be replaced with plant-based ground meat alternatives for a vegetarian option. These products often have similar textures and can be seasoned the same way. Use an equal amount and cook as you would ground beef. Processed cheese can be substituted with a combination of cream cheese and additional shredded cheddar for a more natural option. Use 4 ounces of cream cheese and increase the shredded cheddar by 1 cup. This maintains the creamy texture while enhancing the cheese flavor. Milk can be swapped with unsweetened almond milk or oat milk for a dairy-free version. Use the same amount, but be aware that the flavor may be slightly different. These plant-based milks will still help achieve the desired consistency in the dip.

Estimated Nutrition

Estimated nutrition for the whole recipe (without optional ingredients):

  • Calories: 1800-2000
  • Protein: 100-120 g
  • Fat: 130-150 g
  • Carbohydrates: 30-40 g

Ingredients

  • 1 pound minced beef
  • 2 tablespoons of taco spice mix
  • 8 ounces processed cheese
  • 2 cups shredded cheddar
  • 10 ounces canned diced tomatoes with green chiles, drained
  • 1/2 cup milk

Step 1: Cook and Season the Ground Beef

Begin by placing a large skillet over medium-high heat.

Add the ground beef to the skillet and cook it until it is no longer pink.

As the beef cooks, season it with your preferred taco seasoning, ensuring that it is well mixed with the meat.

This will infuse the meat with a delicious, savory flavor.

Step 2: Combine with Tomatoes and Cheeses

Once the ground beef is fully cooked, drain the juice from a can of diced tomatoes.

Add the drained tomatoes into the skillet with the ground beef.

Next, add cubes of Velveeta cheese and shredded cheddar cheese.

Stir the mixture continuously as the cheeses begin to melt, creating a creamy and rich texture.

Step 3: Incorporate Milk and Finish Melting Cheese

After the cheeses have partially melted, pour in the milk, which will help create a smooth, creamy consistency.

Stir constantly until all the cheese is fully melted and the mixture is evenly combined.

This step ensures a rich, velvety sauce that complements the seasoned beef and tomatoes perfectly.

Step 4: Garnish and Serve

Once everything is well mixed and heated through, you can garnish the dish with additional toppings if desired.

Suggested garnishes include chopped cilantro, diced green onions, or a dollop of sour cream.

Serve the dish immediately while hot, and enjoy this delicious cheesy beef skillet!
