Ingredients
- 5-6 red potatoes, cubed
- 2 tablespoons coarse salt
- 1 stick of unsalted butter
- 3/4 cup heavy cream or whole milk
- 1 lb thin asparagus, ends trimmed
- 3 tablespoons fresh lemon juice
- 2 tablespoons extra virgin olive oil
- Salt
- Pepper
Step 1: Prepare and Boil the Potatoes
Fill a large pot with cold water and add the cubed red-skinned potatoes along with 2 tablespoons of kosher salt.
Make sure the potatoes are added to cold water to ensure even cooking.
Bring the water to a boil and cook the potatoes until they are fork-tender.
Step 2: Cook the Asparagus
When the potatoes are almost fully cooked, add the pencil-thin asparagus to the boiling water.
Cook for 2-4 minutes until the asparagus is bright green and slightly tender but still crisp.
Once done, remove the asparagus from the pot and place it on a serving platter.
Step 3: Season the Asparagus
Drizzle the asparagus with 2 tablespoons of extra virgin olive oil, a pinch of salt, pepper, and 3 tablespoons of freshly squeezed lemon juice.
