Ingredients
- Salt (fine sea salt for even seasoning)
- 1/2 stick butter (unsalted, at room temperature)
- 1/2 cup buttermilk (full-fat for rich flavor)
- 2.5 lb Yukon Gold potatoes (peeled and cut into 1-inch chunks)
Step 1: Prepare the Potatoes
Start by peeling and dicing about 2 and 1/2 lbs of Yukon Gold potatoes.
Make sure to cut them into similar sizes to ensure even cooking.
Step 2: Boil the Potatoes
Place the diced potatoes in a saucepan and add at least 1 teaspoon of salt.
Cover the potatoes with water and bring the pan to medium-high heat.
Boil the potatoes for about 10 to 15 minutes, or until they are fork-tender.
Step 3: Drain and Add Ingredients
Once the potatoes are cooked, drain them well.
Add half a stick of butter (or a whole stick for larger quantities) to the drained potatoes.
Pour in half a cup of slightly warmed buttermilk.
