Ingredients
- 2 russet potatoes
- 1 head of cauliflower
- Chicken broth (or vegetable broth for vegan option)
- Salt
- Pepper
- Herbs (fresh or dried)
Step 1: Choose and Prepare Potatoes
Begin by selecting the right potatoes for your mashed potatoes.
Use russet or Yukon Gold potatoes for smooth and fluffy results.
Avoid waxy potatoes like red or white varieties.
If you prefer a lower-carb option, you can also prepare some cauliflower to mix with the potatoes.
Step 2: Chop and Boil
Chop the potatoes, either peeling them or leaving the peel on according to your preference.
If you are using cauliflower, chop it as well.
Place the chopped potatoes and cauliflower (if using) in a pot and fill it about 3/4 full with water.
Move the pot to the stovetop and bring the water to a boil.
Cover the pot and let it cook for 1 to 1.5 hours, or until a knife easily inserts into the potatoes.
Step 3: Cool and Puree
Once the potatoes and cauliflower are cooked, set them aside to cool.
Transfer the cooled potatoes and cauliflower to a food processor.
Add chicken broth to the food processor.
Puree the mixture until you reach your desired smoothness.
Step 4: Season and Serve
Season the mashed potatoes with salt and pepper to taste.
Serve immediately for a fresh and delicious side dish, or store them to have a make-ahead option for Thanksgiving or any other meal.
