Ingredients
- 2 pounds (1 kg) baby potatoes
- 1/2 cup heavy cream (120 ml)
- 4 tablespoons butter
- 2 teaspoons salt (plus more for seasoning)
- Black pepper (to taste)
- Chopped chives (for garnish)
Step 1: Prepare and Boil the Potatoes
Begin by slicing any larger baby potatoes in half so they are all evenly sized.
Add the potatoes to a large pot and fill with enough cold water to just about cover them.
Stir in 2 teaspoons of salt.
Bring the water to a boil and cook the potatoes for 15-20 minutes, or until they are soft right through the center.
The timing will depend on the size of the potatoes; a fork should easily pierce through them when they are done.
Step 2: Drain and Steam Dry the Potatoes
Once the potatoes are cooked, drain them in a colander but do not rinse.
Leave the potatoes to steam dry for a few minutes.
This step removes excess moisture and prevents the mash from becoming watery.
Step 3: Heat Cream and Butter
While the potatoes are steaming dry, place the pot back on the stove over low heat.
