Today, I’m sharing my favorite recipe for mashed Yukon Gold potatoes.
These potatoes are buttery, smooth, and oh-so-satisfying.

Ingredients
- 1 ½ cups olive oil
- ½ cup trimmed garlic cloves
- 1 cup heavy whipping cream
- 2 sticks unsalted butter
- 4 pounds peeled and quartered yukon potatoes
- ¼ cup sour cream
- Sea salt to taste
- Cracked black pepper to taste
- Chopped fresh chives for garnish
Step 1: Infuse Olive Oil with Garlic
In a small pot, add 1 to 1.5 cups of olive oil and ½ cup of trimmed garlic cloves.
Heat over low heat for 20-25 minutes until the garlic is tender and browned.
Once done, strain the mixture and set both the infused oil and the roasted garlic cloves aside.
Step 2: Prepare the Cream and Butter Mixture
In a separate small sauce pot, combine 1 cup of heavy whipping cream and 2 sticks of unsalted butter.
Warm over low heat until completely melted.
Keep this mixture warm as you prepare the rest of the recipe.
Step 3: Cook the Potatoes and Garlic
Peel and quarter 4 pounds of Yukon Gold potatoes.
Add the potatoes to a large pot of salted water along with 10-12 trimmed garlic cloves.
Bring to a low boil over medium-high heat and cook for 10-12 minutes, or until the potatoes are easily pierced with a fork.
Step 4: Mash the Potatoes
Strain the cooked potatoes and transfer them, along with the roasted garlic cloves, to a food mill, stand mixer, hand mixer, or hand masher.
Mash the potatoes until they are smooth and free of lumps.
Step 5: Combine Ingredients
Fold in the warm cream and butter mixture, ½ to ¾ cup of the roasted garlic olive oil, and ¼ cup of sour cream.
Season with sea salt and cracked pepper to taste.
Use a rubber spatula to stir until everything is completely combined.
If the mashed potatoes seem too thick, you can add more olive oil or sour cream to reach your desired consistency.
Step 6: Serve and Garnish
Transfer the mashed potatoes to a serving bowl, creating channels on the surface with the back of a spoon.
Drizzle with extra melted butter and sprinkle with chopped fresh chives for garnish.
