Ingredients

For the roasted vegetables:

  • 1 tsp salt
  • 1 onion (peeled and quartered)
  • 4 tbsp olive oil (good quality extra virgin)
  • 1 tsp dried oregano
  • 1 lb tomatoes (such as Roma or vine-ripened, halved)
  • 1 head garlic (top sliced off to expose cloves)
  • 1 tbsp paprika
  • 1 tsp black pepper

For the soup base:

  • 10.4 oz Boursin cheese (Garlic & Fine Herbs flavor)

For the garnish:

  • 1 tbsp fresh basil (finely chopped)
  • 6 tbsp heavy cream

Step 1: Preheat the Oven and Prepare Ingredients

Preheat your oven to 425°F.

While the oven is heating up, wash your tomatoes and remove any stems.

Peel the outer layer of the onion off and quarter it, removing any stems from both ends.

Cut off the top of the head of garlic, leaving the base intact and the cloves still in the head.

Step 2: Arrange and Season the Vegetables

Drizzle olive oil onto the bottom of a 9″x13″ baking dish.

Place the tomatoes, quartered red onion, and the whole head of garlic into the baking dish.

Sprinkle the vegetables with paprika, oregano, salt, and black pepper.

Toss the ingredients in the dish to coat them evenly with the spices and olive oil, if desired.

Step 3: Bake the Vegetables

Bake the dish in the preheated oven for 15 to 20 minutes until the tomatoes are bursting and the onion is nicely browned.

Remove the dish from the oven carefully.

Step 4: Add Cheese and Continue Baking

Add the Boursin cheese and 1/4 cup of water to the dish with the baked vegetables.

Return the baking dish to the oven and bake for an additional 15 minutes until the cheese is melted and slightly golden.

Step 5: Blend the Ingredients

Carefully scoop the tomatoes, cheese, onion, and any excess liquid and sauce from the baking dish into a bowl or blender.

Remove the head of garlic and carefully squeeze the cloves out of the head and into the bowl with the other ingredients.

Discard the peel and base of the head of garlic.

Pour the mixture into a blender or use an immersion blender.

Pulse for 1 minute or until the desired consistency is reached and all the onion, garlic, and tomato are pureed.

Step 6: Serve the Dish

Pour the pureed mixture into a serving bowl.

Serve with fresh basil and a drizzle of fresh cream on top for added texture and flavor.

Enjoy your delicious creation!
