Let’s get into the holiday spirit and start baking! 🎄🍪

| Preparation Time | 15-30 minutes |
| Cooking Time | 10-15 minutes |
| Total Time | 35-45 minutes |
| Level of Difficulty | Medium |
Ingredients
For the cookies:
- 1/2 cup plus 2 tbsp dark cocoa powder
- 1 cup all-purpose flour
- 1/2 cup white sugar
- 1 tbsp milk
- 1/2 cup dark brown sugar (packed well)
- 1 1/4 cups semi-sweet chocolate chips
- 1/4 tsp salt
- 1/2 cup unsalted butter (I like Kerrygold for this)
- 1 tsp vanilla essence (Madagascar bourbon vanilla for best flavor)
- 1 large egg (at room temperature for better mixing)
- 1 tsp baking soda
For the topping:
- dark chocolate m&m’s
Step 1: Prepare the Baking Sheets
Line 2 baking sheets with parchment paper or silicone baking mats.
This will prevent the cookies from sticking and make cleanup easier.
Step 2: Mix the Wet Ingredients
In the bowl of an electric mixer, combine the butter and sugars.
Beat them together on medium-high speed until the mixture is light and fluffy, which should take about 2-3 minutes.
Blend in the egg and vanilla extract, making sure to scrape down the bowl if needed to ensure everything is well combined.
Step 3: Combine Dry and Wet Ingredients
In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
Slowly add these dry ingredients to the wet ingredients in the mixer, using low speed, just until everything is incorporated.
Mix in the milk on the lowest speed, then fold in the chocolate chips by hand to prevent over-mixing.
Step 4: Form the Cookie Dough Balls and Chill
Preheat your oven to 350˚F (175˚C).
Roll about 2 tablespoons of the dough into balls and place them on the prepared baking sheets.
Top the dough balls with M&M’s for added color and flavor.
Place the cookie sheets in the freezer for 10-15 minutes.
Alternatively, you can chill the dough in the refrigerator for at least 2 hours or up to 36 hours.
Step 5: Bake the Cookies
Once chilled, bake the cookies in the preheated oven for 10-11 minutes.
Immediately after removing from the oven, if desired, top the cookies with more M&M’s.
Allow the cookies to cool on the baking sheets for about 5 minutes, then transfer them to a wire rack to cool completely.
Step 6: Serve and Enjoy
Once the cookies have cooled completely, they are ready to be enjoyed.
Serve them fresh or store them in an airtight container for later.
Happy baking!
