Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 12 tablespoons softened butter
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1 shot freshly brewed espresso
  • 1 egg
  • 1 teaspoon vanilla extract
  • Dark chocolate chunks

Step 1: Preheat and Prepare Dry Ingredients

Preheat your oven to 350°F (175°C).

In a bowl, combine 2 cups of all-purpose flour, 1.5 teaspoons of baking soda, and a pinch of kosher salt.

Set this mixture aside for later use.

Step 2: Cream Butter and Sugars

In a separate bowl, use an electric mixer to cream together 12 tablespoons of softened butter, 1 cup of packed light brown sugar, and 0.5 cups of granulated sugar.

Mix until the ingredients are well combined and creamy.

Gradually incorporate the dry ingredients into the wet mixture, mixing until just combined to maintain a fluffy dough.

Be careful not to overmix the dough.

Step 5: Add Chocolate and Chill the Dough

Fold in dark chocolate chunks into the dough, being careful not to overmix.

Cover the dough and refrigerate for about 30 minutes.

This helps the dough firm up and improves the texture of the cookies.
