Today, I’m sharing my favorite recipe for Perishke. These little wonders are soft, fluffy, and stuffed with delicious cottage cheese.

Ingredients
For the dough:
- 3 1/2 cups all-purpose flour (I always use King Arthur all-purpose flour)
- 1/4 cup granulated sugar
- 2 large eggs (at room temperature for better dough consistency)
- 1/2 tsp fine salt
- 2 1/4 tsp instant yeast
- 1 cup warm water (about 105-115°F)
- 1/4 cup neutral oil (like canola or vegetable oil)
For the filling:
- 1 cup dry curd cottage cheese (drained well if not dry curd)
- 1 to 2 tsp fresh dill, chopped
- 1/2 tsp fine salt
- 1/4 tsp ground black pepper
- 1 tbsp heavy cream
For the glaze:
- 1/4 tsp ground black pepper
- 1 tbsp fresh dill, chopped
- 1/2 cup heavy cream or half-and-half
- 1/4 tsp fine salt
- 1 tbsp melted butter (I like Kerrygold unsalted butter for this)
For finishing:
- melted butter for brushing
Step 1: Prepare Dry and Wet Ingredients
In the bowl of a stand mixer, whisk together 3 ½ cups all-purpose flour, 2 ¼ teaspoons instant yeast, and ½ teaspoon table salt.
Set this aside for now.
In a separate bowl or large measuring cup, whisk together 1 cup warm water, ¼ cup canola oil, and 2 large eggs.
Ensure the mixture is well-combined and smooth.
Step 2: Combine and Mix Ingredients
Pour the egg mixture into the flour mixture and lightly stir to combine.
Place the bowl onto the stand mixer fitted with a dough hook attachment.
Turn the mixer on low speed and mix until all of the flour is incorporated, which should take about 5 minutes.
Pause as needed to scrape down the sides of the bowl.
Step 3: Adjust Consistency and Knead
If the dough is still sticking to the sides of the bowl, add up to ½ cup more flour, 1 tablespoon at a time, until the dough pulls away from the sides but still sticks slightly to the bottom.
Continue to mix the dough for an additional 5-10 minutes until it becomes smooth and elastic.
Step 4: Form and Rest the Dough
Turn the dough onto a lightly floured surface.
Gently knead it by hand 5-10 times until it forms a smooth ball.
Place the dough ball into an oiled bowl, turning it to coat all sides with oil.
Cover the bowl with plastic wrap or a lid and let the dough rise in a warm area for 1 to 1 ½ hours, or until it has doubled in size.
