Suggestions for Ingredient Substitution
Zucchini can be replaced with other vegetables like butternut squash, carrots, or sweet potatoes for a different flavor profile and nutritional content. Use a spiralizer or vegetable peeler to create noodle-like shapes. Cooking times may vary depending on the vegetable chosen.
Cream cheese can be substituted with Greek yogurt or cashew cream for a lighter or dairy-free option. Greek yogurt provides a tangy flavor and more protein, while cashew cream offers a rich, creamy texture suitable for vegans. Adjust the amount to taste, as these alternatives may have different consistencies.
Parmesan cheese can be swapped with nutritional yeast for a vegan, cheese-like flavor. Nutritional yeast is rich in B vitamins and provides a savory, umami taste. Use about 1.5 tablespoons of nutritional yeast to replace the Parmesan, adjusting to personal preference. For those seeking a different cheese option, pecorino romano or aged cheddar can work well in this dish.

Ingredients
- 1 large zucchini
- 1/2 tablespoon olive oil
- 2 tablespoons cream cheese (plain or herb & garlic)
- 1/8 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon grated parmesan cheese (extra for garnish if desired)
- Chopped fresh parsley for garnish (optional)
Step 1: Prepare the Zucchini Noodles
Start by cutting the ends off the zucchini.
Use a spiralizer with the medium noodle blade (avoid using the smallest noodle) to create zucchini noodles.
Set the noodles aside.
Step 2: Cook the Zucchini Noodles
Preheat olive oil in a large skillet over medium-high heat.
Once the oil is hot, add the zucchini noodles and sprinkle with garlic powder, making sure to omit any salt at this stage.
Cook the noodles for 3 to 5 minutes, stirring them with tongs until they are slightly softened and wilted.
Step 3: Add Cream Cheese and Season
Move the noodles to one side of the skillet.
Add the cream cheese to the empty side of the skillet and stir it until fully melted.
Once melted, toss the noodles with the cream cheese, ensuring they are well-coated.
Season with salt and pepper to taste.
Step 4: Add Parmesan Cheese and Serve
Stir in the grated Parmesan cheese until it is completely combined with the noodles.
Once everything is well mixed, garnish with additional Parmesan cheese, if desired, and serve immediately.
Enjoy your creamy, cheesy zucchini noodle dish!
