Easy Bacon Egg Casserole

Ingredients

  • 7 large eggs, lightly whisked
  • 12 oz evaporated milk
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon onion seasoning
  • 1 teaspoon garlic seasoning
  • 16 oz refrigerated shredded plain hash brown potatoes
  • 1/2 cup diced bell peppers
  • 1/2 cup bacon bits (divided, use a 2.8 oz jar of hormel® real bacon pieces)
  • 1/4 cup thinly sliced green onions (divided)
  • 1 cup shredded sharp cheddar cheese
 

Step 1: Prepare the Egg Mixture

In a large bowl, gently whisk together 7 large eggs, a 12 oz can of evaporated milk, 1 teaspoon of kosher salt, ½ teaspoon of freshly ground black pepper, 1 teaspoon of onion powder, and 1 teaspoon of garlic powder until well combined.

Set this mixture aside for later use.

 

Step 2: Assemble the Casserole Layers

Grease an 8×8 baking dish to prevent sticking.

Evenly spread 16 oz of plain refrigerated shredded hash brown potatoes in the bottom of the dish.

Sprinkle ½ cup of chopped bell peppers over the hash browns.

Layer half of the ½ cup of real bacon pieces and half of the ¼ cup of thinly sliced green onions on top of the bell peppers.

Spread 1 cup of shredded sharp cheddar cheese evenly over this layer.

Finally, add the remaining bacon pieces and green onions on top of the cheese.

 

Step 3: Add the Egg Mixture

Pour the reserved egg mixture over the entire dish, making sure it covers all the layers evenly.

This will help the casserole to set properly.

 

Step 4: Chill or Bake

Cover the dish tightly with plastic wrap or foil.

You can either chill the casserole in the refrigerator overnight or bake it right away if you’re preparing it in the morning.

 

Step 5: Preheat the Oven

If you chilled the casserole overnight, preheat your oven to 350°F (175°C) with the rack in the lower middle position.
