Easy Baked Potato Casserole Recipe

Ingredients

  • 6 large russet potatoes
  • 1/4 cup unsalted butter
  • 4 oz cream cheese
  • 2/3 cup sour cream
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 cups grated cheddar cheese
  • 1 1/2 cups cooked, crumbled bacon
  • 1/4 cup chopped green onions
 

Step 1: Preheat Oven and Prepare Casserole Dish

Preheat your oven to 375°F (190°C).

Prepare a 9×13 casserole dish by coating it with nonstick cooking spray.

This will prevent the casserole from sticking to the dish during baking.

 

Step 2: Prepare and Cook the Potatoes

Wash, peel, and dice the potatoes.

Place them in a large pot, then cover with water.

Bring the water to a boil and cook the potatoes until they are tender, about 15-20 minutes.

Drain the potatoes thoroughly and return them gently to the empty pot.

 

Step 3: Combine Ingredients for Potato Mixture

Gently fold in the butter, cream cheese, sour cream, and milk into the drained potatoes.

Be careful to mix gently to avoid mashing the potatoes too much.

Add garlic powder, salt, and pepper to taste.

Stir in 1 1/2 cups of shredded cheese and 1 cup of crumbled bacon.
