Ingredients
- 1 pound cooked bacon, crumbled, separated for use
- 1 pound frozen tater tots
- 12 eggs
- 2 cups shredded cheddar cheese, separated for use
- 1/3 cup milk
- Salt and pepper to taste
- Cooking spray
- 3/4 cup diced tomatoes, seeded
- 1 diced avocado, pitted and peeled
- 2 tablespoons chopped chives
Step 1: Prepare the Baking Pan and Potato Tots
Preheat your oven to 375°F (190°C).
While the oven is heating, coat a 9×13 inch pan with cooking spray to ensure the casserole doesn’t stick.
Once prepared, place the frozen potato tots in a single layer on the bottom of the pan.
Step 2: Mix the Egg Mixture
In a large bowl, whisk together the eggs and milk until thoroughly combined.
Stir in 3/4 of the crumbled bacon and 1 cup of shredded cheddar cheese.
Season this mixture with salt and pepper to taste, ensuring the flavors are well balanced.
Step 3: Assemble and Bake the Casserole
Pour the egg mixture evenly over the potato tots in the prepared pan.
Sprinkle the remaining bacon and cheese over the top of the egg mixture.
Place the pan in the oven and bake for 45 minutes or until the center is set and the top is golden brown.
Step 4: Prepare the Topping
While the casserole is baking, prepare the topping.
In a separate bowl, combine the diced tomatoes, diced avocado, and sliced chives.
Stir to combine and season with salt to taste.
Step 5: Finish and Serve
Once the casserole is done baking, remove it from the oven and let it cool for a few minutes.
Spoon the prepared tomato and avocado mixture over the top of the baked casserole.
