It’s packed with flavor, super cheesy, and just the right amount of kick.

Ingredients
For the casserole:
- Pinch salt
- 1 1/4 lb cooked shredded chicken breast
- 2 eggs
- 1 medium yellow onion (finely diced)
- 2 medium carrots (diced, about 1/2-inch pieces)
- 1 tsp dried parsley
- 1 1/2 tsp garlic powder
- 1 tbsp avocado oil (or olive oil)
- 3/4 cup buffalo sauce (I use Frank’s RedHot)
- Pinch black pepper
- 1/3 cup mayonnaise (Helmann’s or Duke’s recommended for best flavor)
- 1 small red bell pepper (diced into 1/2-inch pieces)
- 3 cups cauliflower rice
For the garnish (optional):
- Sliced green onions
- Ranch dressing
- Hot sauce
Step 1: Prepare the Casserole Dish and Oven
Preheat the oven to 375°F (190°C).
Grease a 3-4 quart casserole dish and set it aside for later use.
Step 2: Sauté the Vegetables
In a large pan over medium-high heat, heat some oil.
Once it’s hot, add the cauliflower rice, diced carrots, diced red pepper, diced yellow onion, garlic powder, dried parsley, and a dash of salt and black pepper.
Sauté, stirring occasionally, until the onions are translucent and the vegetables are partially cooked through, which should take about 10-12 minutes.
Transfer the sautéed vegetable mixture to the prepared casserole dish.
Step 3: Prepare the Buffalo Sauce Mixture
In a separate bowl, combine the buffalo sauce, mayo, and eggs.
Whisk the ingredients together until smooth and well mixed.
Step 4: Assemble the Casserole
In the casserole dish, mix together the sautéed vegetables with the shredded chicken and the buffalo sauce mixture.
Spread the combined mixture out evenly in the dish to ensure even cooking.
Step 5: Bake the Casserole
Bake the casserole uncovered in the preheated oven for 20-25 minutes, or until the center is set and the top is slightly browned.
Step 6: Garnish and Serve
Remove the casserole from the oven and drizzle with ranch dressing, hot sauce, or additional buffalo sauce.
Sprinkle with sliced green onions and a dash of black pepper for extra flavor.
