This was absolutely Divine and Heavenly! It is sooooo delicious! It was like eating dessert for dinner. It was very easy and fast to make & came together perfectly. I roasted my butternut squash, yellow onion, pumpkin seeds, and pecans all together for 20 min. Then I added in dried cranberries and cooked quinoa. I cooked the quinoa in vegetable broth to give it more flavor. I added in several spices. The only thing I did not like was your instructions for the dressing were very unclear with the amounts of everything. You did not say how much olive oil, apple cider vinegar, ECT. I had no idea what I was doing! I just added in 1/2 C olive oil, 1 TBSP apple cider vinegar, 1/2 tsp cinnamon, 1 1/2 tsp’s honey and some fresh parsley and mixed it up. Thank goodness it came out perfectly! I put that on top of the roasted things and it was so delicious! I highly recommend this recipe! I will make it again & again.
