Ingredients
- 6 standard size english muffins
- 12 eggs
- 2 1/2 cups milk
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 cup shredded cheddar cheese
- 1 cup spicy mexican cheese blend (shredded monterey jack cheese, jalapeno peppers, and cheddar cheese)
- Chopped green onion
- Bacon
- Pure maple syrup
- Butter
Step 1: Prepare and Bake the Bacon
Preheat your oven to 425°F (220°C).
Line a large sheet pan with parchment paper and arrange your favorite bacon on it, ensuring to cover the sides as well.
Bake the bacon for 15 to 18 minutes.
While it’s baking, move on to the next step.
Step 2: Toast the English Muffins
Cut 6 standard English muffins into bite-sized pieces.
Place the pieces on a separate lined sheet pan in a single layer.
After the bacon has been in the oven for around 6 minutes, add the sheet pan with English muffin pieces.
Bake them for 12 minutes.
Step 3: Finish the Bacon
Once the bacon has baked for 15 to 18 minutes, remove it from the oven and brush it with pure maple syrup.
Return it to the oven for an additional 5 minutes to achieve your desired crispness.
After this, transfer the bacon to a paper plate lined with paper towels to drain the excess grease.
Step 4: Prepare the Egg Mixture
In a large bowl, crack 12 eggs and whisk them together.
Add 2.5 cups of milk, 1 teaspoon of salt, ¼ teaspoon of black pepper, ¼ teaspoon of garlic powder, and ¼ teaspoon of onion powder to the eggs.
Whisk until the mixture is well combined and fluffy.
Step 5: Assemble the Casserole
Coat a 9×13 baking dish with butter, ensuring to cover the sides and corners.
Cut the cooked bacon into bite-sized pieces and place half of it in the bottom of the baking dish.
Sprinkle 1 cup of shredded cheddar cheese over the bacon.
Add the crunchy English muffin cubes on top of the cheese in a single layer.
Pour the egg mixture evenly over the English muffin cubes.
Use a fork to press down the pieces, allowing them to soak up the liquid.
Let the casserole sit for 15 minutes, or refrigerate for 1 hour to overnight.
Step 6: Bake the Casserole
Preheat your oven to 350°F (175°C).
Sprinkle the remaining bacon on top of the casserole, followed by another cup of shredded cheese (consider using a spicy Mexican blend for extra flavor).
Add chopped green onions on top for added freshness and color.
Bake the casserole for about 60 minutes, or until the eggs are set.
Check by inserting a knife in three spots; it should come out clean without wet egg.
Allow the casserole to sit on the countertop for 10 to 15 minutes before cutting it into squares.
