Ingredients
For the filling:
- 1 tbsp minced garlic
- 8 slices provolone cheese (or similar mild white cheese)
- 2 lb ribeye or chuck eye steak (thinly sliced against the grain)
- 2 green bell peppers (seeded and thinly sliced into strips)
- 1/2 yellow onion (thinly sliced)
For the egg mixture:
- 1 tsp black pepper
- 4 large eggs
- 1/2 tbsp cayenne pepper sauce (like Frank’s RedHot)
- 1/2 cup almond flour (finely ground for best texture)
- 1 tbsp Worcestershire sauce
- 1/2 tsp onion powder
- 1 3/4 tsp salt
Step 1: Prepare the Ingredients
Begin by preheating your oven to 350°F (175°C).
While the oven is heating up, trim off any large pieces of fat from 32 ounces of chuck eye steak or ribeye.
Next, slice the steak into thin strips and then chop into smaller pieces to make them easier to cook and eat.
Step 2: Cook the Steak and Vegetables
Add the chopped steak to a skillet over medium-high heat and cook until the steak is about two-thirds cooked.
At this point, add 1/2 chopped yellow onion, 2 chopped green bell peppers, and 1 tablespoon of minced garlic to the skillet.
Continue cooking for a few minutes until the beef is fully cooked and the vegetables have softened.
Remove the skillet from the heat and drain any liquid from it.
Step 3: Assemble the Casserole
Lightly oil a 2-quart casserole dish to prevent sticking.
Pour the beef, onion, and pepper mixture into the casserole dish.
Tear 4 slices of provolone cheese into small pieces and insert them into the mixture, spreading them evenly for a good melt.
Step 4: Make and Add the Egg Mixture
In a mixing bowl, combine 4 large eggs, 1 3/4 teaspoons salt, 1 teaspoon ground black pepper, 1/2 teaspoon onion powder, 1/2 tablespoon cayenne pepper sauce, 1 tablespoon Worcestershire sauce, and 1/2 cup almond flour.
Whisk the ingredients together until the mixture is thoroughly combined.
Evenly distribute the egg mixture over the casserole, giving it a little shake and tap to settle the mixture properly.
Step 5: Bake the Casserole
Place the casserole dish uncovered in the preheated oven and bake for 25 minutes.
After 25 minutes, remove the casserole from the oven and place 4 slices of provolone cheese, torn in half, over the top.
Return the casserole to the oven for an additional 5 minutes to melt the cheese.
Step 6: Serve and Enjoy
Remove the casserole from the oven and let it cool slightly before serving.
