Ingredients
- 3 cups chicken stock
- 3 tablespoons melted butter
- 2 teaspoons kosher salt
- 1 teaspoon cornstarch
- 2 sprigs fresh dill, chopped
- 2 lemons, zested and juiced
- 1 clove garlic, minced
- 2 cups orzo
- 2 teaspoons ground coriander
- 2 teaspoons kosher salt
- 2 teaspoons freshly ground black pepper
- 4 small to medium boneless, skinless chicken breasts
- 1 lemon, sliced into 1/4-inch-thick slices
- 1 tablespoon chopped fresh parsley
Step 1: Preheat the Oven and Prepare the Stock Mixture
Preheat the oven to 375°F (190°C).
In a bowl, whisk together 3 cups of chicken stock, 2 tablespoons of melted butter, 2 teaspoons of kosher salt, 1 teaspoon of cornstarch, 2 sprigs of chopped fresh dill, the zest and juice of 2 lemons, and 1 clove of minced garlic.
Once combined, stir in 2 cups of orzo into the mixture.
Step 2: Season the Chicken Breasts
In a separate bowl, mix together 2 teaspoons of ground coriander, 2 teaspoons of kosher salt, and 2 teaspoons of freshly ground black pepper.
Coat 4 small to medium boneless, skinless chicken breasts with the seasoning mixture, making sure they are evenly covered.
Step 3: Assemble the Casserole
Pour the stock and orzo mixture into a glass 9-by-13-inch baking dish.
Place the seasoned chicken breasts in the dish, laying them at an angle so that all but the tops are submerged in the mixture.
Shingle lemon slices over the chicken breasts for an extra burst of citrus flavor.
Step 4: Bake the Casserole
Bake the uncovered dish in the preheated oven for 35 to 40 minutes, or until the chicken registers an internal temperature of 165°F (74°C).
The orzo should be tender and the chicken thoroughly cooked.
