Ingredients
- 3-4 medium potatoes (approximately 1-2 lbs), cut into cubes
- 3/4 cup half-and-half (add more for extra creamy mashed potatoes)
- 4 tablespoons softened butter
- 4 tablespoons sour cream
- Salt and pepper as needed
- 2 large boneless, skinless chicken breasts
- 2-3 tablespoons olive oil
- 1/2 teaspoon sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup low sodium chicken broth (or stock)
- 1 teaspoon chicken bouillon (or better than bouillon roasted chicken base)
- 1/2 cup heavy whipping cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon worcestershire sauce
- 1/4 cup grated parmesan cheese
Step 1: Make Quick Mashed Potatoes
Start by filling a large pot with water and adding peeled and chopped potatoes.
Bring the water to a boil and cook the potatoes until they are fork tender.
Once cooked, drain the potatoes and return them to the pot.
Add half and half, butter, and sour cream, then season with salt and pepper.
Using a potato masher or an electric mixer, mash the potatoes until you reach your desired consistency.
Set the mashed potatoes aside and keep them warm.
Step 2: Prepare the Chicken
While the potatoes are cooking, prepare your chicken breasts.
Cut each chicken breast crosswise to ensure they cook quickly and evenly.
Season both sides of the chicken with garlic powder, onion powder, salt, and pepper.
Step 3: Cook the Chicken
Heat olive oil in a large skillet or cast iron pan over medium-high heat, making sure there is enough oil to coat the bottom of the pan.
Once the oil is hot, add the seasoned chicken breasts.
Cook the chicken for about 3-4 minutes on each side until they are nice and golden brown and cooked through.
Transfer the cooked chicken to a plate, cover with foil, and set it aside.
Step 4: Make the Sauce
In the same pan over medium heat, melt butter.
Add flour and cook for about one minute, stirring with a wooden spoon to create a roux.
Pour in chicken broth, then add chicken bouillon, heavy cream, garlic powder, onion powder, and Worcestershire sauce.
Continue to cook the sauce over medium heat for 2-3 minutes until it thickens, making sure to scrape up all the delicious browned bits from the bottom of the pan with the wooden spoon.
Step 5: Finish the Dish
Stir in grated Parmesan cheese into the sauce until it melts and is well combined.
Add the cooked chicken (along with any juices collected on the plate) back into the skillet.
Heat until the chicken is warmed through, making sure to coat the chicken with the sauce as it finishes cooking.
Step 6: Serve
Serve the cooked chicken over the warm mashed potatoes with plenty of sauce spooned over the top.
