Ingredients
For the chicken:
- 1/2 tsp salt
- 1/2 tsp black pepper
- 4 boneless, skinless chicken breasts (about 6-8 oz each)
- 1/2 tsp crushed red pepper (for a little kick)
- 1 tbsp olive oil (I like Pompeian Pure Olive Oil for this)
- 1 tbsp Italian herbs
For the vegetables:
- 1 lb asparagus, trimmed (snapped where they naturally break)
- 3 garlic cloves, minced (freshly minced for best flavor)
- 1/2 cup minced onion
For the sauce:
- 1/4 cup grated Parmesan cheese (optional, adds extra richness)
- 1 cup heavy cream
- 2 tbsp butter (I prefer Kerrygold unsalted butter)
- 2 tbsp lemon juice
Step 1: Season and Cook the Chicken
Season chicken with Italian seasoning, crushed chili pepper, salt, and pepper.
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add the seasoned chicken to the skillet and cook for 5-6 minutes per side, or until the chicken is fully cooked and has a nice golden crust.
Remove the chicken from the skillet and set it aside.
Step 2: Sauté the Vegetables
In the same skillet, add butter, chopped onion, and asparagus.
Cook for 2-3 minutes, stirring occasionally, until the vegetables are just tender.
Add minced garlic and cook for just under a minute, being careful not to let it burn.
Step 3: Prepare the Creamy Sauce
Pour heavy cream and lemon juice into the skillet.
Add grated Parmesan cheese and stir to combine all the ingredients.
Continue stirring until the mixture is well blended and begins to thicken.
Step 4: Simmer and Adjust the Dish
Return the cooked chicken to the skillet, nestling it into the creamy sauce.
Let the dish simmer for 3-4 minutes until the sauce has thickened and the chicken is heated through.
Taste the sauce and adjust the salt and pepper if needed.
If the sauce becomes too thick, add 1/4 cup of water, chicken stock, or broth to reach your desired consistency.
Step 5: Serve and Enjoy
Once the sauce has thickened to your liking and the chicken is fully reheated, remove the skillet from the heat.
Serve the chicken and asparagus with the creamy sauce drizzled over the top.
